Mix Italian seasoning, salt, lemon pepper, black pepper, garlic powder, and onion powder in a small bowl. Set aside.
Cut each pita into 8 triangles.
Heat vegetable oil in a frying pan to 325-350°F.
Fry the pita in batches, ensuring they’re not overcrowded.
Once golden and crispy, remove chips from the oil and let them drain on a wire rack. Fry them just enough so they’re soft inside but crispy outside, like Cava’s.
Transfer fried pita chips to a bowl and add seasoning to taste.
Toss chips around to evenly coat them.
Serve with hummus or your favorite dip!
