Cookies and Cream Cake
Ingredients
- – 1 chocolate cake recipe below cooked in 3 6” rounds or 2 8” rounds
- – 1 package cream cheese at room temperature
- – 1 stick butter at room temperature
- – 1 tablespoon vanilla extract
- – 1/4 teaspoon almond extract
- – 1/2 teaspoon salt
- – 4 cups powdered sugar
- – 1 cup finely crumbled Oreos
- – Extra Oreos for decorating
Instructions
- In a mixing bowl, whip together the cream cheese, butter, vanilla extract, almond extract, and salt on medium-high speed for 1-2 minutes until fluffy.
- Reduce the mixer speed to low, and gradually add the powdered sugar, 1 cup at a time, mixing until fully incorporated.
- Once the powdered sugar is mixed in, increase the mixer speed to medium-high and whip for an additional 2 minutes until smooth and creamy.
- Turn off the mixer, and gently fold in 1 cup of finely crumbled Oreos until evenly distributed.
- Now, use the icing to frost the cooled chocolate cake rounds, layering them with the delicious cookies and cream icing. Don’t forget to decorate the cake with extra Oreos for an added touch of sweetness!
