Chocolate Orange Fudge Pudding

Ingredients

Orange Sponge:

  • cups all-purpose flour
  • ¾ cup granulated sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 cup plant-based milk almond, soy, or oat
  • ½ cup orange juice
  • ¼ cup vegetable oil or melted coconut oil
  • Zest of 1 orange
  • 1 tsp vanilla extract

Chocolate Fudge Sauce:

  • 1 cup brown sugar
  • ¼ cup cocoa powder
  • cups boiling water
  • 1 tsp vanilla extract

Instructions

Prepare the Orange Sponge:

  • Preheat your oven to 350°F (175°C).
  • Grease an 8×8-inch baking dish or a similar-sized ovenproof dish.
  • In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
  • In another bowl, mix the plant-based milk, orange juice, vegetable oil, orange zest, and vanilla extract until smooth.
  • Add the wet ingredients to the dry ingredients, mixing until just combined.
  • Pour the batter into the prepared baking dish and spread it evenly.

Prepare the Chocolate Fudge Sauce:

  • In a medium bowl, whisk together the brown sugar and cocoa powder.
  • Sprinkle the mixture evenly over the batter in the baking dish.
  • Carefully pour the boiling water over the top, ensuring it covers the entire surface. Do not stir.
  • Drizzle the vanilla extract over the top.

Bake the Pudding:

  • Bake for 30-35 minutes, or until the top of the pudding is set and the edges are bubbling.
  • Allow the pudding to cool for 10 minutes before serving.

Serve:

  • Spoon the pudding into bowls, ensuring each serving includes both the sponge and the gooey fudge sauce from the bottom.
  • Enjoy this rich, gooey, and delicious dessert!
