Ingredients

Scale
  • 1/4 cup of all-purpose flour
  • 2 tablespoons of unsweetened cocoa powder
  • 1 teaspoon of instant espresso powder
  • 1/4 teaspoon of baking powder
  • 1/2 teaspoon of vanilla extract
  • 3 tablespoons of milk
  • 3 tablespoons of melted unsalted butter
  • 1 large egg at room temperature
  • 2 tablespoons of sugar
  • 1/4 teaspoon of salt
  • 2 ounces of dark chocolate chunks


Instructions

  1. Toss all the dry ingredients into a microwave-friendly mug. Give it a good mix until everything’s combined.
  2. Add the wet ingredients to the mug with the dry ones. Mix it up until the batter becomes smooth.
  3. Sprinkle those chocolate chunks on top.
  4. Pop it in the microwave on high for 1 minute. (Check the notes below for more details.)

Notes

  • For an extra treat, swap the chocolate chunks with a square of dark chocolate.
  • Keep an eye on the baking time; it might vary based on your microwave. If it’s still a bit gooey after 1 minute, give it another 30 seconds.
  • Don’t let it overbake! Leaving it in the microwave for too long can make it dry and rubbery. Enjoy your quick and tasty mug cake!
