Chocolate Coffee Mug Cake

Ingredients
- 1/4 cup of all-purpose flour
- 2 tablespoons of unsweetened cocoa powder
- 1 teaspoon of instant espresso powder
- 1/4 teaspoon of baking powder
- 1/2 teaspoon of vanilla extract
- 3 tablespoons of milk
- 3 tablespoons of melted unsalted butter
- 1 large egg at room temperature
- 2 tablespoons of sugar
- 1/4 teaspoon of salt
- 2 ounces of dark chocolate chunks
Instructions
- Toss all the dry ingredients into a microwave-friendly mug. Give it a good mix until everything’s combined.
- Add the wet ingredients to the mug with the dry ones. Mix it up until the batter becomes smooth.
- Sprinkle those chocolate chunks on top.
- Pop it in the microwave on high for 1 minute. (Check the notes below for more details.)
Notes
- For an extra treat, swap the chocolate chunks with a square of dark chocolate.
- Keep an eye on the baking time; it might vary based on your microwave. If it’s still a bit gooey after 1 minute, give it another 30 seconds.
- Don’t let it overbake! Leaving it in the microwave for too long can make it dry and rubbery. Enjoy your quick and tasty mug cake!
