Ingredients
  

*Dry Ingredients:*

  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 4 teaspoons homemade chai spice try our recipe!
  • 1 teaspoon kosher salt

*Wet Ingredients:*

  • 1 cup light brown sugar
  • 1 cup maple syrup
  • 2 teaspoons vanilla extract
  • 2 cups unsweetened applesauce
  • 2 cups shredded Honeycrisp apple about 3 medium apples, moisture removed
  • ½ cup 2% Greek yogurt
  • 1 cup plain unsweetened almond milk
  • 4 large eggs

*Frosting:*

  • 8 oz. fat-free cream cheese room temperature
  • 1 cup 2% plain Greek yogurt almost room temperature
  • cup maple syrup or more to taste

Instructions
 

  • Preheat your oven to 350ºF and prepare a 9×13-inch cake pan by lining it with parchment paper or using nonstick cooking spray.
  • In a large bowl, combine all the dry ingredients and set aside.
  • In another bowl, whisk together the brown sugar, maple syrup, and vanilla extract until smooth.
  • Add the applesauce, shredded apple, Greek yogurt, and almond milk to the wet ingredients and mix well.
  • Crack the eggs into a separate bowl, whisk lightly, and add them to the wet ingredients, mixing until just combined.
  • Gradually add the dry ingredients to the wet mixture, stirring until well combined.
  • Pour the batter into the prepared pan and bake for 30-33 minutes, or until a toothpick inserted into the center comes out clean.
  • While the cake bakes, prepare the cream cheese frosting by mixing all the frosting ingredients until smooth.
  • Once the cake is baked, allow it to cool completely before frosting.
  • Dust the cake with a sprinkle of chai spice or top it with your favorite chopped nuts.

Notes

  • We tested this cake in both aluminum and ceramic pans, and both worked well.
  • Keep an eye on your cake around the 25-minute mark to prevent over-browning.
  • If the frosting needs to be sweeter, add more maple syrup to taste.
