Banana Cake with Chocolate Frosting
Imagine banana bread, but even better—that's what you get with this cake! A moist, tender banana sponge layered with the most incredible chocolate frosting.
Banana Sponge:
- 3 cups self-rising flour
- 1 tsp baking powder
- ½ tsp baking soda
- ¾ cup sugar
- 1 ½ cups dairy-free milk + 1 tsp vinegar
- ⅓ cup dairy-free yogurt
- ¼ cup neutral oil
- 3 ripe bananas mashed
Chocolate Frosting:
- 14 oz dairy-free cream cheese
- ¼ cup vegan chocolate protein powder
- ⅓ cup cocoa powder
- 4 tbsp maple syrup
Preheat your oven to 340°F (170°C).
Grease and line two round cake pans.
Mix the milk and vinegar, then set aside to curdle.
In a large bowl, combine the wet ingredients. Sift in the dry ingredients and mix gently until just combined.
Divide the batter evenly between the prepared pans and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
While the cakes are baking, whisk together the frosting ingredients until smooth and creamy.
Once the cakes have cooled completely, layer them with the chocolate frosting.
