Strawberry Cheesecake Buns

For the Cheesecake Filling:

For the Strawberry Glaze:

strawberry jam

For Decoration (optional):

Instructions
#### Cheesecake Filling:
Whisk together heavy cream, sugar, salt, vanilla, and lemon juice until thickened.
Add room temperature cream cheese and whisk until creamy. Avoid overmixing.
Transfer the mixture to a piping bag fitted with a round piping tip.
#### Filling the Buns:
Use a small knife to create a pocket inside each roll.
Fill each roll generously with the cheesecake filling (about 25g/roll).
Refrigerate while you prepare the glaze.
#### Strawberry Glaze:
Stir all ingredients together in a small saucepan.
Cook and stir over low heat until the mixture thickens.
Remove from heat and let cool slightly.
#### Dipping and Decoration:
Carefully dip the top of each roll into the glaze and shake off the excess. Place on a wire rack.
Optionally, decorate the rolls with sliced strawberries and crushed graham crackers.
Notes
Keep the buns refrigerated for freshness. They can be stored for 3-5 days and are best enjoyed cold.
