Thaw the puff pastry sheets according to the package instructions. Preheat the oven to 375°F.
Using a cookie cutter or the top of a small bowl, cut out 4 circles from the puff pastry. These circles should be slightly larger than the pineapple rings.
Line a baking sheet with parchment paper. Spread honey evenly over the parchment paper, then sprinkle 2 tablespoons of coconut sugar over the honey. Arrange the pineapple rings on top.
Place a puff pastry circle over each pineapple ring, gently pressing the pastry to adhere to the fruit.
Optionally, spray with non-stick spray or brush with an egg wash for a golden finish. Bake for 20-25 minutes until golden brown.
Once baked, carefully flip the treats over and sprinkle with powdered sugar if desired. Enjoy!
