In a food processor, blend the frozen pineapple and 1/2 cup coconut milk until smooth. If it's too thick, add a bit more coconut milk until it blends well.
Add the vanilla extract and honey to the mixture and blend again until smooth and creamy.
Spoon the Dole Whip into a piping bag or a large plastic bag, then seal it and freeze for 20 minutes.
After chilling, massage the bag gently to soften the Dole Whip.
Pipe the Dole Whip into cups or bowls using your favorite tip, and top it off with shredded coconut, sprinkles, or any other toppings you love.
