13"-by-9" or 1 (17"-by-12") frozen phyllo sheets, thawed

Instructions
Preheat oven to 350°F and drizzle oil on a small baking sheet.
Dry out the feta using towels and a heavy object.
Lay phyllo sheets on a work surface and sprinkle with thyme and lemon zest.
Wrap the feta in the phyllo, brush with oil, and sear in a skillet until golden.
Bake until creamy and warm.
Sprinkle with sesame seeds, red pepper flakes, and thyme. Drizzle with honey and serve with pita chips. Enjoy!
