Preheat your oven to 400 degrees Fahrenheit.
Lay out the pita bread rounds on a clean surface.
Cut each pita round into wedges or triangles, choosing the size you prefer. Smaller pieces get crispier, while larger ones are a bit chewier. Aim for even sizes for consistent baking.
Season the Chips: In a bowl, mix the olive oil, oregano, garlic powder, paprika, salt, and pepper until well combined.
Place the pita chips in a large mixing bowl. Drizzle the seasoned olive oil mixture over them and gently toss to coat each chip evenly.
Spread the seasoned pita chips in a single layer on baking sheets. Use multiple sheets or bake in batches if needed.
Place the baking sheets in the preheated oven and bake for about 10-12 minutes until the chips turn golden brown and crispy. Flip them halfway through.
Note: Keep an eye on them as they can go from crisp to overdone quickly.
Once done, remove the pita chips from the oven and let them cool completely. They'll continue to crisp up as they cool.
