Heat a skillet over medium-high heat, then add the olive oil and butter.
Toss in the onions, peppers, and garlic. Cook for 3 to 4 minutes until they soften.
Add the ground beef and season with adobo, coriander, smoked paprika, cayenne, black pepper, and salt. Mix well.
Let the ground beef cook for 5 to 6 minutes, breaking it apart with a wooden spoon as it browns.
Reduce the heat to low. Divide the meat into two to four sections, depending on how big you want your sandwiches. Place 1 to 2 slices of cheese on top of each section. Cover and let the cheese melt for about a minute or two.
On toasted bread, layer avocado, lettuce, tomato, meat & cheese, ketchup, mayo, and optional bacon.
Close the sandwich and enjoy it while it's warm.
