In a bowl, crack the eggs and whisk until you see bubbles forming.
Add in the pancake mix, baking powder, granulated sugar, salt, and vanilla extract. Mix until it's crumbly.
Fold in the Ricotta cheese until the mixture becomes smooth.
Heat the vegetable oil in a pot or Dutch oven until it reaches 325-375 degrees Fahrenheit.
Use an ice cream scooper to shape dough balls and carefully drop them into the hot oil. *Remember: drop them close to the oil surface to avoid splashing.
Cook the Zeppoles for about 3 minutes, turning them regularly until they turn golden brown.
Take the Zeppoles out of the oil and let them drain on a paper towel.
Sprinkle powdered sugar on top and serve them warm with Nutella.

*Note: When dropping the dough balls into the oil, do it close to the surface to prevent splashing. Be cautious to avoid burns during this step!
