Preheat your oven to 400 degrees F.
Peel the outer layers of the garlic bulbs, leaving the cloves intact.
Use a sharp knife to cut off the top 1/4 of each garlic bulb, exposing the cloves. Drizzle olive oil, and sprinkle a bit of salt and pepper. Cover with aluminum foil and bake for 40 minutes. Once done, set it aside to cool.
Squeeze the cooled garlic cloves into a large bowl. Add room temperature butter, parsley, parmesan cheese, salt, and pepper. Mix until smooth.
Slice the Italian bread vertically, making 1/2-inch wide cuts without cutting all the way through. Spread the prepared butter mixture between each slice and on top. Wrap the bread in aluminum foil, covering it completely.
Bake for 35-40 minutes until the cheese is melted, and the bread is crispy on the outside.
Remove from the oven and let it sit for 5-10 minutes. Serve warm, either by slicing it completely or pulling the loaf apart with your hands. Enjoy the cheesy goodness!
