Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius).
In a big mixing bowl, combine the all-purpose flour, sugar, baking powder, baking soda, and salt.
Add the diced unsalted butter to the dry ingredients, and with a pastry cutter or two knives, create a mixture resembling coarse crumbs.
Stir in the milk until the dough just comes together; a bit lumpy is perfect!
Prepare the pears by peeling, coring, and slicing them into thin wedges.
In a baking or casserole dish, arrange the pear slices evenly, then sprinkle flour, sugar, cinnamon, nutmeg, and a pinch of salt on top. Toss together to coat the fruit.
Drop spoonfuls of the cobbler dough on top of the pears, covering them as much as possible.
Place the cobbler in the preheated oven and bake for 40-45 minutes, or until the topping is golden brown, and the pears are tender.
Once out of the oven, let it cool slightly before serving. Enjoy it warm, and for an extra treat, top it off with a scoop of vanilla ice cream or a dollop of whipped cream!
