1small bell pepper seeded and chopped
½English cucumber cut into ½ inch cubes

For the Garlicky Mustard Dressing:
⅓cupolive oil
⅓cuplemon juice
2tablespoonDijon mustard
2tablespoonshoney
3clovesgarlic minced
1teaspoonkosher salt or more to taste
¼teaspoonblack pepper
