3oz.rice vermicelli noodles
12large shrimp. peeled and deveined
1large carrotjulienned
2Persian cucumbersjulienned
8oz.Napa cabbagethinly sliced
1tbsp.fish sauce
1tbsp.brown sugar
1/4c.rice vinegar
12large rice paper sheets
2tbsp.black sesame seeds
12fresh mint leaves
12fresh basil leaves
FOR PEANUT SAUCE:
1/2c.smooth peanut butter
1tbsp.low-sodium soy sauce
2tbsp.rice vinegar
1clovegarlicgrated
1tbsp.freshly grated ginger
4tbsp.boiling water
1/4c.crushedtoasted peanuts, for serving

FOR SUMMER ROLLS:
