Easy Strawberry Upside Down Cake Recipe - This Strawberry Upside Down Cake is the official dessert of summer. If you don't have an oven-safe skillet, you can use a 12" cake pan!

  • 1 lb. strawberries thinly sliced into rounds
  • 1/4 c. brown sugar
  • 2 tbsp. cornstarch
  • 1 3/4 c. all-purpose flour
  • 2 tsp. baking powder
  • pinch of salt
  • 3/4 c. granulated sugar
  • 2 large eggs
  • 1/2 c. sour cream
  • 1/2 c. (1 stick) unsalted butter, melted
  • 1 tsp. pure vanilla extract
  • Vanilla ice cream for serving
