Grease and flour three 9" round cake pans.

Add eggs, vanilla, buttermilk, and oil to the dry ingredients and mix until combined.
Pour in the hot coffee and stir until smooth.
Divide the batter evenly among the prepared pans and bake for 30-40 minutes.
